Why this recipe

When tomatoes are grown properly, you don’t need to complicate things.
This dish is all about letting a beautiful heirloom tomato speak for itself.

The Red Pear Franchi tomato, with its dense flesh and rich flavour, is perfect served fresh, paired with creamy burrata and good olive oil.


🧺 Ingredients

  • 2–3 large Red Pear Franchi tomatoes
  • 2 fresh burrata balls
  • A handful of cherry tomatoes (optional)

Seasoning

  • Extra virgin olive oil
  • Flaky sea salt
  • Freshly ground black pepper

Optional extras

  • Fresh basil or oregano
  • Crusty bread or grilled ciabatta

👩‍🍳 Method

Slice the large tomatoes into thick wedges and arrange them on a serving board or platter.
Place the burrata in the centre and gently tear it open so the creamy centre spills out slightly.

Scatter herbs over the tomatoes, drizzle generously with olive oil, then season with salt and pepper.
Serve immediately, ideally with warm bread to soak up the juices.


🌱 Garden tip

Pick tomatoes at full colour and let them rest at room temperature for a day before eating.
Never refrigerate — cold kills flavour.
