Scarola Verde a Cuore Pieno is a classic Italian escarole with large flat heads, a full pale golden heart and outer leaves that are deep green and slightly bitter. The heart is the prize: mild, crunchy, and excellent in winter salads.
This is the endive you braise with garlic and olive oil, stuff into a pizza di scarola, or chop raw into a salad with anchovy and capers. Hardy and reliable in Irish autumn and winter gardens. A genuine Italian kitchen essential.
