Rainbow Radish & Herb Butter Toasts (Serves 4 as a snack)
Ingredients
A small bunch of mixed colour radishes, thinly sliced
4 slices good crusty bread, toasted
50 g soft butter
1β2 tbsp chopped fresh herbs (parsley, chives or dill)
Flaky sea salt and black pepper
Method
Mix the soft butter with the chopped herbs and a pinch of salt.
Spread the herb butter generously over warm toast and top with overlapping slices of colourful radish.
Finish with a little flaky salt and pepper and serve straight away as a simple, vibrant starter or snack
