Tips & Tricks
For the straightest roots, ensure soil is deep, loose, and free of stones. Sow thinly to minimise thinning. Excellent for early and successional sowings. Companion plant with lettuce and onions to help deter carrot fly.

French Grated Carrot Salad (Carottes Râpées)

500g ‘Touchon’ carrots, peeled and coarsely grated

3 tbsp extra virgin olive oil

1 tbsp lemon juice or white wine vinegar

1 tsp Dijon mustard

Salt and pepper

Fresh parsley, chopped (optional)

Place grated carrots in a large bowl.

In a small bowl, whisk together oil, lemon juice, mustard, salt, and pepper.
