Tips & Tricks
For the most intense purple colour, ensure plants get plenty of sunlight. The colour is retained when eaten raw or lightly steamed. Blanching (tying leaves over the head) is not necessary, as the purple colour acts as a natural sunscreen. Excellent companion for lettuce and beans.

1 head ‘Violetto di Sicilia’ cauliflower, cut into florets

3 tbsp olive oil

3 garlic cloves, sliced

Zest and juice of 1 lemon

Salt and black pepper

Preheat oven to 220°C.
