Garden-to-Table Recipe
Plaice Fillets Rolled in Cabbage with Prosecco Sauce

4 large outer red cabbage leaves

4 plaice or flounder fillets

100ml Prosecco or dry white wine

100ml fish or vegetable stock
-
100ml double cream
-
1 shallot, finely chopped

Butter, salt, pepper

Blanch cabbage leaves for 2 mins, then pat dry.

Season fillets, place on a leaf, roll up, and secure with a toothpick.

Cook rolls in butter in a pan for 8-10 mins, turning. Remove.

In same pan, soften shallot, add Prosecco, reduce by half. Add stock, reduce slightly. Stir in cream, season.

Serve rolls with sauce.
