Spiced Carrot & Lentil Soup

500g ‘Berlicum’ carrots, chopped

150g red lentils

1 onion, chopped

1 litre vegetable stock

1 tsp ground cumin

½ tsp ground coriander

Olive oil, salt, pepper

Greek yoghurt & fresh coriander to serve

Sauté onion in oil until soft. Add spices and cook for 1 minute.

Add carrots, lentils, and stock. Simmer for 20-25 mins until tender.
