Cosmic Purple is a carrot with intense purple skin and a contrasting sweet orange core. Slice one crosswise and the two-tone effect is genuinely stunning. The flavour is sweet with a slightly earthy note that is different from standard orange carrots.
Roots are medium length, about 18 to 20cm, and grow well in most Irish soils. The purple colour comes from anthocyanins, the same antioxidants found in blueberries. Children find the purple colour fascinating, which is a useful trick for getting them to eat vegetables.
