Garden‑to‑Table Recipe

Roasted Rainbow Carrot Tray bake (Serves 4)

Ingredients

  • 500 g mixed carrots (white, orange and yellow)

  • 2 tbsp extra‑virgin olive oil

  • Sea salt and black pepper

  • 1 tbsp honey or maple syrup

  • 1 tbsp apple cider vinegar or lemon juice

  • A handful of fresh parsley or chives, chopped

  • A sprinkle of toasted seeds or chopped nuts (optional)

Method

  1. Scrub the carrots, leave small ones whole and cut larger ones into even batons; spread on a baking tray.

  2. Toss with olive oil, salt and pepper, then roast at 190 °C for 20–25 minutes until tender and lightly caramelised.

  3. Whisk the honey and vinegar (or lemon), drizzle over the warm carrots, add the herbs and seeds or nuts, toss gently and serve as a colourful side dish.
