Simple Roasted ‘Rio Grande’ Passata Base

Ingredients (for 4 people – makes about 750ml passata base)

  • 1.5kg ripe ‘Rio Grande Toboga’ tomatoes, halved

  • 1 onion, roughly chopped

  • 4 garlic cloves, unpeeled

  • 3 tbsp olive oil

  • A few sprigs of fresh thyme or oregano

  • Salt and black pepper, to taste

  • Optional: 1 tsp sugar to balance acidity

Method – step-by-step

  1. Preheat oven to 180°C. In a large roasting tray, combine halved tomatoes, chopped onion, and unpeeled garlic cloves.

  2. Drizzle with olive oil, scatter with herb sprigs, and season generously with salt and pepper. Toss to coat.

  3. Roast for 45-60 minutes, until the tomatoes are collapsed, soft, and slightly caramelised at the edges.

  4. Allow to cool slightly. Squeeze the soft garlic from its skin back into the tray. Discard the herb stalks.

  5. Transfer everything (including all juices) to a food processor or blender. Blend until smooth.

  6. For a silky texture, pass the mixture through a food mill or fine sieve to remove seeds and skins.

  7. Taste and adjust seasoning, adding a little sugar if the tomatoes are very acidic. Use immediately as a pasta sauce base, or freeze in portions for future use.
