Tips & Tricks
For non-stop harvests, sow a small patch every 2-3 weeks. Harvest by cutting the central shoot when the first flower buds form to encourage more side shoots. It thrives in cooler weather; provide shade in peak summer heat to prevent bolting.

Quick Orecchiette with 40-Day Cima Di Rapa

300g orecchiette pasta

300g Cima di Rapa ’40 Days’, chopped

2 cloves garlic, sliced
-
1 red chilli, deseeded & chopped (or chilli flakes)

4 tbsp olive oil
-
Salt
-
Toasted breadcrumbs (optional)

Cook pasta in salted water. In the last 3 minutes, add the greens.

Heat oil in a pan, gently fry garlic and chilli until fragrant.

Drain pasta and greens, reserving some water. Add to the pan and toss.

Add a splash of pasta water to create a light sauce.

Serve topped with toasted breadcrumbs for crunch.
